Avocados are the healthiest and yummiest fruit with numerous benefits health, physical fitness, hair and skin. You can make a lot of yummy dishes with avocados. You can use in salads, sandwiches, tacos, sprinkle its slices over anything you want like pizza or burger or anything. But have you heard about healthy avocado muffins recipe? No? You are on absolute loss. When I first heard about this recipe I was surprised that how could they use avocado in muffins and with chocolate chips? But after I tried and ate these I came to know how healthy and yummy it could be. So I decided to write this recipe for everyone out there. I will be using everything very healthy so that people on diet and diabetics can satisfy their sweet tooth with this. Try this out and have fun eating.
Healthy Avocado Muffins Recipe
Ingredients:
Oat flour: 2- ¼ cups
Avocado: 1 large
Maple syrup: 1/2 cup
Apple sauce: ½ cup (unsweetened)
Large eggs: 2
Vanilla extract: 1 tsp
Baking soda: 1 tsp.
Baking powder: 1 tsp.
Sea salt: 1 tsp.
Dark chocolate chips: ½ cups or more if you like chocolatier
Butter to grease muffin tray.
Instructions:
Grease the muffin tray with butter and set aside. And pre heat the oven with 350 F, while you prepare the batter.
Take a large bowl and combine oats flour, baking powder, sea salt and baking soda and mix well and set the bowl aside.
Now take juicer blender jug and add avocado, apple sauce, maple syrup and vanilla extract and run the blender for smoother mixture. Pour the mixture in a bowl.
Beat the eggs with electric beater until they are fluffy. Now combine egg mixture with avocado mixture and mix well with spatula.
Now pour this avocado, apple sauce, maple syrup and egg mixture to the dry ingredients bowl and fold mix with the spatula and add chocolate chips and mix.
Divide this batter in the already greased muffin tray and bake for 20 minutes or more. Check with toothpicks. Allow to cool them out before getting them out from the tray. You can refrigerate in air tight jar to store for 2-3 days.
