6. Mediterranean Watermelon Salad:

This is a very refreshing salad that you can prepare in just 20 minutes. All you need is onions, cucumbers, watermelon cubes, pomegranate juice, and few more ingredients to taste that you can easily find in your kitchen cabinets.


1 bowl full of fresh watermelon cubes
2 yellow bell peppers
1 cup of onions
1 cup of cucumber
1 cup of tomatoes
Pomegranate Juice
1 Tbsp. of mustard paste
2 Tbsp. of olive oil
A pinch of cumin powder
A pinch of Oregano powder
10-12 diced Olives
1 tsp. of chopped Parsley
Romaine and Rocket lettuce
Flax seeds and pistachios to top
Salt n pepper to taste


Put pomegranate juice in a bowl and add mustard paste, cumin powder, oregano, and salt n pepper and mix well. Now add olive oil in another bowl and put watermelon cubes, bell peppers, cucumber, onions, olives and tomatoes and mix. Now add parsley, salt n pepper and mix well. Add lettuce leaves, pistachios and flax seeds. And mix this mixture with watermelon mixture and enjoy this sweet and sour chilled treat.

This is a whole great lot of carrots, green veggies like shredded cucumber, cherry tomatoes and some green and black olives.


2-3 lettuce leaves
2-3 rocket leaves
2-3 Romanian leaves
½ diced carrots
½ shredded cucumber
4-5 cherry tomatoes, cut in half
1 spring onion
9-10 green and black olives
2 tbsp. of white vinegar
2tbsp. of olive oil
A pinch of mustard powder, salt and pepper to taste


Wash all the veggies before cutting them. Now cut them all in the desired shapes and nicely mix them in a bowl. Take another bowl and whisk together all the dressing ingredients including vinegar, olive oil and spices and drizzle over the veggies and mix well. Enjoy this crispy crunchy yet healthy treat.
