6. Creamy Chocolate Cupcakes
These creamy cupcakes are so smooth and delicious and inside cream-cheese filling tastes like heaven.
Ingredients
All-purpose flour: 1- ½ cups
Sugar: 1 cup
Baking Cocoa: ¼ cup
Baking soda: 1 tsp.
Eggs: 2
Water: ¾ cup
Vegetable oil: 1/3 cup
White vinegar: 1 tbsp.
Vanilla extract: 1 tsp
A pinch of salt
Filling Ingredients:
Cream cheese: 1 package (softened)
Sugar: 1/3 cup
Egg: 1 (beaten lightly)
1 package cream cheese (8 ounces), softened
Chocolate chips: 1 cup
Chopped Walnuts: 1 cup
A pinch of salt
Instructions
Take a large mixing bowl and add flour, sugar, cocoa, salt and baking soda and whisk to combine. In another bowl, add eggs, oil, water, vanilla extract and vinegar and whisk to combine. Now mix both dry and wet ingredients together and mix well.
Preheat the oven and grease the muffin cups already. Pour the cake batter in muffin cups and prepare for filling. In a large mixing bowl, beat cream cheese and sugar together until creamy and fluffy. Add eggs and salt and beat to get smooth mixture. Add chocolate chips and fold the mixture to combine. Drop a spoonful of the mixture into already filled muffin cups and sprinkle with walnuts.
Bake the cupcakes for about 25 to 30 minutes or until the toothpick comes out clean. Cool for 10 minutes before serving with tea or coffee or you can place in fridge for later.
