4. Healthy Pumpkin Spice Cupcakes
When delights are tasty and healthy, they becomes treats. And this is absolutely true for pumpkin spice cupcakes I am going to mention here.
Whole wheat flour: 1- ½ cups
Powdered sugar: ½ cups
Baking powder: 1 tsp.
Baking soda: 1 tsp.
Cinnamon powder: 1 tsp.
A pinch of salt
Nutmeg powder: ½ tsp
Cloves powder: ¼ tsp.
Whole egg: 1
Canned pumpkin: 1- ¾ cup
Canola oil: 1.2 cup
Ingredients for icing:
Low fat cream cheese: 1 package
Powdered sugar: ½ cup
Vanilla extract: 1 tsp.
Grease 12 muffin cup tray with oil and preheat the oven.
In a bowl, combine sugar, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, clove powder, and salt and whisk to mix.
In another bowl, beat eggs until fluffy, add pumpkin and oil and beat again until mixed well. Now combine this batter with dry ingredients and whisk until mixed well. Make sure you do not over mix the batter. The batter will be thick than usual muffin batter. Add spoonful of batter in already greased muffin tray and bake for about 15-20 minutes. Remove from the oven and let them cool meanwhile you prepare for icing.
In a bowl, combine cream cheese, sugar, and vanilla extract and beat until smooth and well-combined. Now spread this icing over the muffins and serve.
